There are certainly multiple ways to capture a WIM, but I don't see how an exact number is a relevant question for the forums.
At the end of the day, as long as the image is sysprepped and you use imagex to capture the OS parition, then you have met the technical criteria.
There are many ways and multiple toolsets to accomplish this including those in WDS, MDT, and ConfigMgr. Each has it's own particular methods and steps depending upon your goals. Each is also well documented on TechNet and and supplementary/third-party documentation
and blogs. Bing and some simple search criteria will help you find these easy enough.
If you need expert help in this endeavour, I suggest you seek out a quality Microsoft partner.

How does capture media work? My understanding is that after building a reference computer and building a task sequence, we generate capture media and then launch it inside the reference system where after going through several changes, an output
file is generated at the SCCM Site Server? Correct me if I am wrong?

A build and capture task sequence is used to automate the entire process of creating a reference machine; the result of this tasksequence is a .wim file (and therefore no need to create a capture media then).
A capture media can be use to capture an existing system (manually built or however it was created).Torsten Meringer | http://www.mssccmfaq.de

That is correct:

Per Torsten's comments, a build and capture task sequence is the prefered method however. Manually building a system to capture is fraught with issues.Jason | http://myitforum.com/cs2/blogs/jsandys | Twitter @JasonSandys
