Are there plans to update the SCCM SuperFlows to 2012? I've only found them for 2007, and as someone new to SCCM, I am unsure how well they generalize.

There are no superflows yet. But hopefully the documentation team will create some soon.

Nope not yet. use the CM12 superflows. In most case they will still work for CM12.
