my suggestion would be:
Before starting, make sure the new Win 2008 server has the same SharePoint version, including service packs and cumulative updates as the win2003 32 bit server.
Then add the Win 2008 server with MOSS to the existing SharePoint farm, configure it by applying the same customisations you have made to the existing servers and make sure everything is working on the new server. When you are ready to switch, change the
DNS entries for your web applications to point to the new server.
Having a hybrid farm with both 32bit and 64bit servers is not recommended, but can be supported if the servers on the same layer have the same architecture. E.g. web front end servers and application servers should have the same architecture.
In your case the only thing to make sure is that you do not keep the old server to serve content to your users. Do not try to setup some sort of load balancing between the 64bit and 32 bit server as this would not be supported.

Hi All,
In addition, to what Dirk has stated above: You could use the database attach method, but you would have issues unless all customizations were built with solutions that you can export from the x86 environment then add to the new envrionment and
there were not any compiled assemblies that were x86 only. Though mixing environments with x86 and x64 systems is not supported for any long term use. By joining the new server to the farm you will have all of the cutomizations applied without issue.
Unless:
There were assemblies that were not compiled for both x86 and x64 environments.Manual WebConfig modificationsFiles copied to folders manually and not by using provisioning features.

Give me some time to test everything
i think both of your suggestions will work. I just have to find a cumulative update that will update 12.0.0.6421 to version 12.0.0.65 64bit. So far i cant find the update.

if you click request hotfix, then click on the link Show hotfixes for all platforms and languages (2), it will then show the x64 downloads.
