Am I forgetting something?
I have two Exchange 2007 servers, both belong to the same domain / organization, both have DC / GC roles installed on them, one of those servers is hosting all the mailboxes. I want to remove the DC roles from the machine serving all the mailboxes, in the
end the other exchange server will be removed from Exchange / AD roles all together. My plan thus far is:
Save SSL certificate
dismount stores
uninstall exchange
demote domaincontroller role
install exchange
remount stores
... am I missing anything? becasue the organization is not being taken offline, i think i'm OK, what do you guys think?

What you have outlined isn't going to work.
You will be unable to uninstall Exchange 2007 because the mailboxes are still on the server. Dismounting the stores doesn't mean anything.
Your only option is to build a new mailbox server, move all of the mailboxes to the second server using move mailbox and then you will be able to remove Exchange. There are no shortcuts that don't put the data at risk.

That is discouraging to hear ... i just started a new job and that is teh configuration I'm trying to cleanup ... I guess i'll just plan for a longer period of downtime and move the mail first. Thanks for your help ...

Another option would be to get a consultant to look at the system. If Exchange was installed on a domain controller (which is against best practises) then who is to say what else is wrong with the system.
However ultimately if you want Exchange off a DC, then you have to move the mailboxes elsewhere.
