It would be nice if I could at least put Exchange and Lync on the same server. Strange, but I just can't find any documentation on whether this can be done with the 2013 releases.

No you cannot install all this products on a single server technically you need to have separate servers
Microsoft has given different requirements for all this products you need to check all the requirements
If you have a single server use Hyper-V virtualization and create separate machine for all of them.

Yes you can check the document for Exchange & Sql on same server its not recommend for production lot of issues will come.

For lab purpose, I think, you can accommodate all in one server. But you mayn't be able to test all the features completely by using one server alone. For example, to evaluate DAG, CAS Array etc.. you may require more servers in exchange test lab.

I agree with you but the problem Sharepoint and Exchange use IIS settings also since microsoft does not recommend you to install this roles on same server
You have option to use Windows Small Business Server 2011 Standard for single box solution, which includes both of the exchange 2010 and sharepoint foundation 2010

I just tried this in a lab for all those who like to try this out... here is what I found...
once lync is deployed it uses IIS... so does exchange... strongly recommend you don't go down this route... you ask why well one of the pages or redirectors whatever you want to call the "Autodiscover" is created for both Exchange 2013 and lync 2013 and are using the same ports... therefore causing all the havoc you can wish for... according to the notes.. Exchange and SharePoint can be on the same. but I'd rather put project and SharePoint together... Exchange and Lync separate
