HAB is a good idea but I dont think it will stop the user browing the GAL. However the 2nd link can possibly work. If this isn't urgent, then I'd suggest you wait for Exch 2010 SP2 and use ABP (address book policies).Sukh

I want to create a mailbox that can't see the other mailboxes on my Exchange server. Am I able to do that through Exchange Server as an admin? It is Exchange Server 2007 on Server 2008 R2.

do you mean you want to create a mailbox that cannot view the global address list ?

Basically, I guess. We don't want this mailbox to have any way to find out that there are other mailboxes out there but still be able to be contacted by those users and reply.

why do you want to do that? Natively with a click of a button you cant and I wouldnt mess around with permission for one mailbox. Does it matter that this mailbox can see the GAL? WHat are you trying to achieve?Sukh

It may be possible with the permissions of OAB directory in IIS. Havnt tested it but if you deny that mailbox user access to oab directory in IIS, it should do the trick. so go to your cas server, open iis, right click and select edit permissions. then add the mailbox user account and deny all permissions.
