When clicking the file tab in Visio 2010 you get a new menu. Under Info you can add some info about the title etc.
I'm creating a template for some drawings and I would like to change the names of some properties.

Is this possible? And how do you do it?

No, you can't edit the standard document property field labels as far as I'm aware.

A code option is available to you if you want to modify the ribbon.xml.  If that's something you want to look into then you might find this link useful.
