We just lost a DC in our main site where our Exchange Env. lives. Because of this we are down to one DC in that site. We do have another DC is a different site. If for some chance the last DC in our Exchange Env. goes down, will Exchange look at a different site for our other DC?

Yes it will look for other DC in other site. The DSACCESS mechanism in Exchange does this.
