Does this issue exist in OWA? If the issue continues in OWA, it means this is not an Outlook client side issue. I'd recommend post a new question in Exchange forum for further assistance.
If the issue doesn't happen when viewing in OWA, please first check if you have any antivirus software installed which may cause email body to be blank. Please have a look at the following KB article which described a similar issue:

If above doesn't work, we can also try creating a new mail profile in Control Panel and then reconfigure your email account in the new profile to see the result. This can help determine whether this issue is due to corrupt profile. To do this, please refer:
