Is there a option to setup a group mailbox and not mark any mails as unread UNLESS someone highlights the mail and does a right click and selects mark as read?

YES, you can modify messageconfiguration in EMS, but note that it will not stop a user from changing them if they want to.
Example:
Set-MailboxMessageConfiguration ALIAS -PreviewMarkAsReadBehavior Never

Didn't know that, thanks! Didnt know this cmdlet existed I was looking for a method the other day to enforce standard fonts, this helps.
