Excel 2003 on Windows 7...Why did my files go bonkers???

I use Excel 2003 on a Windows 7 pc. Today, all of my recently-created excel files have changed themselves.

I had a material safety data sheet that had 16-sections, in English. My job was to translate the entire document into French. I opened the English version and just replaced the text in each box with the appropriate French translation including accent marks. As of yesterday, I had 6 documents completed and saved on my desktop.

I sent copies of the final draft files to another department and they were placed on our server...my copies I kept on my pc's c-drive.  As of today, all French excel files--on the server and on my pc--are showing 'corruption' or areas that have mysteriously changed on their own. They all show the same sections missing, and sections are re-numbered incorrectly--and certain cell shadings are now gone. I did not use any macros or any formulas. The data in each cell was entered manually and there were not references to previous spreadsheets. Each sheet should have been stand-alone with no links or ties to any other spreadsheet, however, they're all experiencing the same data loss/changes.

I've attempted to restore my system to a previous day, but that didn't restore any of the excel files. I've tried using Excel to restore each file but that has not worked. I've cleared the temp file and even restored the excel file in the 'roaming' folder. I've ran multiple spyware/virus scans and nothing has been found--all of which I've done in safe-mode. I've tried pretty much everything I can think of but the files 1)do not show any 'previous versions' anywhere that I can use to restore and 2)even the French files on our server are corrupted in the same way.

I'm totally at a loss for how to proceede, as is our IT Department. These documents each take hours and days to create and perfect, and the data is no completely unusable.

I do however, have a couple of the forms saved as .pdf on our server and they are not corrupt. Perhaps importing from .pdf to excel??? I also have access to an original file copy that I had emailed before everything became corrupted...I could rebuild the files from that, however I am concerned that the same thing will happen again.

I'm looking for any suggestions or advice anyone could give me.
