Any ideas on when we are going to see the RTM availibility for evaluation, for MSDN subscribers, or Volume License?

Very soon! We just RTM'd on Friday (12/8), so give it a week or two and then check back.

We're all impatient, especially since Beta 2 was feature incomplete and there was no Release Candidate. C'mon now, if you're going to announce it's publically RTM'ed shouldn't the Partners alreadyhave it so we can deal with customer inquiries / launch plans / etc...

Yes, that's my main gripe. I'm trying not to be a whiner, but that's just how it is.

Vista and Office 2007 were both available for download 7 days after RTM, so I guess we have two more days to see if the same schedule holds true for Exchange 2007 RTM. Does seem a bit quiet for such a significant milestone...

I still don't see the RTM software on Technet Subscriber downloads, but the eval version is now available for download: http://go.microsoft.com/?linkid=5789595 Of note is the fact that the eval version can be upgraded to the full version later just by entering a license key.
