Exchange 2010 - DR Test - Make Passive Database Active

Hi

Firstly I must apologies if this is in the wrong place.

I currently have a client who host their Exchange Servers in my companies datacenter on the VMWare platform. The exchange environment consists of two Multi-Role Exchange 2010 servers with a DAG and database copies.. Currently there are 4 databases, 2 active and 2 passive databases on either server.  Server01 is replicated every 4 hours using VEEAM and backed up once daily, Server02 only has its OS drive backed up daily.

We have been asked to perform a DR test in the next month or so and exchange is a component of this test. We have planned to restore services in a SANDBOX environment. The one thing I am trying to figure out however is that if we do restore a replica of Server01, we will have 2 Active Databases and 2 Passive Databases. 

How can I bring the 2 passive databases online without having to restore or rebuild Server02 in the sandbox environment.

All suggestions will be really appreciated.
