Currently I am in the process of planning to migrate my servers to Windows Server 2012 R2, but I cannot find any documentation on setting up Exchange 2013 in this environment.

My current environment is WSE 2012 running on its own hardware, with a Windows Server Standard running a VM with the Exchange Server installed.  I would like everything on the same version.

Any suggestions?

I agree with Rajkumar's sugegstion. There is no related technet article to verify whether you can install exchange 2013 on windows server 2012 r2.

Maybe we need to do some tests to verify whether the environment is supported.

                                                 

Exchange 2013 SP1 will be released early 2014 with support to 2012R2

Answer is that you cannot upgrade an OS that has Exchange installed on it.  You best bet would be to do a new server install of 2012 R2 and then Exchange and migrate.
