I tried this and the same error comes up.

Have you tried to install this same package on another server to make sure the package is good?
Also, I see that your update path is pointing to d:\updates, installation with SP1 or SP2 and 'slipstreaming' updates is not supported. If there are any update rollups in this directory, please remove them and try the installation again, then
apply UpdateRollups after the installation is complete.

I cant seem to change any of those paths, when I choose a custom install and only select the 'mailbox role' the standard install carries on, the D drive is the media drive where the disc is inserted. I have not tried the same package on another server,
however I tried a different package on the same server and I get the same error eg (enterprise edition)

Since you tried different packages, but get the same error on this server, I suggest you use the same install file to test on another server:
If it can run well on other servers, this may issue on your this server.
If it still have issue on other servers, download Exchange 2010 SP2 to have a try:
Microsoft Exchange Server 2010 Service Pack 2 (SP2)

Definately will do. Microsoft worked on the problem for 7 hours yesterday - still not resolved. I will advise what the fix was when done..

Downloaded Exchange with SP2:
http://www.microsoft.com/en-us/download/details.aspx?id=28190
Install system pre req (Filter Pack)
http://technet.microsoft.com/en-us/library/bb691354.aspx
Run the following two commands from Powershell:
Import-Module ServerManager
Add-WindowsFeature NET-Framework,RSAT-ADDS,Web-Server,Web-Basic-Auth,Web-Windows-Auth,Web-Metabase,Web-Net-Ext,Web-Lgcy-Mgmt-Console,WAS-Process-Model,RSAT-Web-Server
-Restart
Server reboots, install runs then there's the following error:
Warning:
An unexpected error has occurred and a Watson dump is being generated: Installing product C:\Exchange\ca\ClientLanguagePack.msi
failed. Fatal error during installation. Error code is 1603. Last error reported by the MSI package is 'Could not open key: UNKNOWN\Components\E8801C2D248F4094FB915079D7FC0B09\46BFFDEDCE2462E4403034E068FD73C8.
Verify that you have sufficient access to that key, or contact your support personnel.'. It was running the command 'Install-MsiPackage -PackagePath 'C:\Exchange\ca\ClientLanguagePack.msi' -LogFile 'C:\ExchangeSetupLogs\Install.ca.Client.20120601-110941.msilog'
-Features 'AdminTools','Mailbox','ClientAccess','Gateway','Bridgehead','UnifiedMessaging','ClientLanguagePack' -PropertyValues 'LOGVERBOSE=1 TARGETDIR="F:\Exchange Server"''.
Then ran the following command:
secedit /configure /cfg %windir%\inf\defltbase.inf /db defltbase.sdb /verbose
Install completed successfully.
