Exchange Mail in Mobile Phones Check
is it possible somewhere in Exchange Server to check, in my organization which users have Exchange mail in their mobile phones?

It would be easy if you did not enable POP3/IMAP access.
You can use get-activesync* powershell cmdlets in powershell or run some scripts that exists on internet - e.g. http://port25guy.com/2013/03/25/how-to-get-a-report-of-active-sync-devices-in-exchange-2010exchange-2013/ (easiest way)
You can analyze activesync related IIS logs using logparser or logparser
