Any Exch version that is supported on 2008 server is x64 only. Exchange server will run on x86 - 64 bit windows server 2008 . it will not run on web server 2008 ( 32 or 64 bit). Exchange 2007 -32 bit not used for production can be installed on 32 -bit windows 2008 but not on web server 2008.

Exchange 2007 and Exchange 2010 are same as far as compatabilty goes. ( BUT there is no 32 bit exchange 2010 for non-producton available) And YES you can install Exchange 2010 on Windows server 2008 x86 - 64 bit Software
