Exchange database whitespace removal

How do we remove the white space from databases of exchange 2007.

Hi,
The direct method is to offline defrag the file. This takes quite some time depending on the size of the EDB file on disk.
There is a clever way too: Create a new mailstore and move the mailboxes to that mail store. Once they are moved delete the old mailstore. This will give you the removal of the whitespace and make your backups smaller without having to take the mail store

a good downtime is needed for this I guess?

Depends on which solution you are considering. If you create a new store and move the mailboxes you can limit the downtime because you can time the move to outside office hours and the user is only down in the time where his/her mailbox is actually being
moved.
If you want to defrag the database all the users on the store will be offline during the defrag, and the time it takes to defrag of course depends on the size of the database and the hardware it runs on.

is there a way to find out that how much is the white spaces in the database?

Look for eventid 1221 in the application eventlog. It usally comes between 1am and 5am since this is the standard online defrag schedule.

I would recommend you to move mailbox into new store and delete existing, Again move mailbox's into new store as suggested by Manu.Anil
