Exchange task is missing in Domain Controller 2008
I ran a test to promote our first 2008 DC and don't recall seeing the Exchange task in AD (on that 2008 machine). It is an 2008 R2.
Can I enable this somewhere? I remember doing this on a domain controller that is 2003.

What exchange version do u have with this 2008 DC?
With Exchange 2007/2010 this old model of managing Exchange recipients using ADUC has changed. You now can only manage exchange recipeints using Exchange Management Console/Shell.
The reason for this change is mentioned here by MS:

Then you won't be able to manage your ex2003 from Win 2008 ADUC, the reason is currently exchange 2003 admin tools cannot be installed on Win 2008 DC.
