Not sure why as I followed all the steps and entered a valid credit card (???) too -- are there any gotcha's regarding extending an Office 365 Evaluation ? Is there a time lag or anything?

Did you mean you have purchased Office 365 and paid for it but you didnt buy it successfully?
First I suggest you check if your credit card paid for it successfully. If it does, please contact the sales and customer support by phone in your country.
You can go to Office store website and select your country to sign in then check the sales and customer phone number in your country.
