External internet email account
How can I set up a connector in Exchange between an external internet mail account (e.g., gmail) and an intermal mailbox - so that all email is sent/received through the mailbox rather than through a client side account setup in the mail client?

Exchange doesn't support that. But if you want all mail sent to an internal address routed to a gmail mailbox instead of an Exchange mailbox, you can set up a mail-enabled contact. You do not need to create an Exchange mailbox
for that.

And the only way to do this for incoming email to the internet account (external) is forwarding?

That's not forwarding, it's redirecting. I don't believe the message looks any different in the gmail mailbox except that the hops it took through the Exchange environment show in the hidden message headers.
