I work at an organization that only uses pcs because of windows exchange server, they just got a new version and they have asked me to see if I can get macs to play well on the server as well as with the security. I can get entourage to work with outlook for getting calender updates and the sort, and can track their internet use, however the thing that I still need to be able to do is track who accesses unprotected or low security files from the macs.

Are the files stored on the Windows server? You can enable File and Object auditing on the server, and then on the folders in which these files are located, you enable the type of auditing you want to audit (read, write, delete, etc...) http://support.microsoft.com/default.aspx/kb/310399
