This was my favourite issue! Since it is not possible automatically with EMC, you need to create users with specifying display name with correct format in EMC/EMS or need to create a script to change newly created mailboxes regularly. You are welcome.... However, in Exchange 2007 method is changed to manage recipients and it is now purely through EMC/EMS which is not integrated or connected to ADU&C console.
