Stepping through Technet's Exchange 2007 Planning and Architecture guide is a good start and can be found at http://technet.microsoft.com/en-us/library/aa998636.aspx. There is good info for planning a simple or standard Exchange Org. Determining what roles you will deploy, expected growth of data and/or personnel, and availability requirements for the system balanced by cost will be key determining factors imho.

If you are a small company , my recommendation will be , not to cluster any thing. Make sure that you can create redundency on HW as much as you can (power, NIC, RAID 5 etc). Depending on the numbers of emails send and recieve, dpending on number non Mapi connection , you can decide on HUB and CAS. ** Most important thing will be your back up and restore policy. Make sure that is well in placethere is a tool from HP and Dell for hardwaresizing on exchange 2007.http://h20338.www2.hp.com/ActiveAnswers/us/en/sizers/microsoft-exchange-server.htmlhttp://msexchangeteam.com/archive/2007/01/15/432207.aspxhttp://www.delltechcenter.com/page/Exchange+2007+Sizing+ToolRaj
