You can allow access to file servers or WSS document libraries is that what you mean? If so, have a look at the properties pages for your CAS server.

you would need either a file server or a sharepoint library. I would go with sharepoint b/c it works well in both OWA and Outlook 2003/2007. File server UNC access would be available in OWA only (or if outlook is on the WAN/LAN/VPN with the file server).

Also, take a good look at security if you are going to allow document access from anywhere!
