So everywhere states doing it as part of a cutover process - but how is it done in 2013? Plenty of resources/scripts available for 2007 and 2010, but nothing comes up for 2013. Is this even possible?!

Not sure i follow your question, if a user has a mailbox then it is mail enabled? you can convert room mailboxes to user mailboxes etc?
essentially you need to disable the mailbox then enable mailuser for the disconnected ad account
Disable-Mailbox Enable-MailUser
I'd use the 2010 powershell scripts in the following link to retain existing atributes.

Scripts for Exchange 2010 should work in exchange 2013, because these scripts collects information from AD.
