What is really installed? Exchange Server 2003? Service Pack 1? Service Pack 2? etc.

6.5.7638 = Microsoft Exchange Server 2003 SP2
6.5.7638.1 = Microsoft Exchange Server 2003 SP2 + some Exchange Patches are installed.

Open Exchange System Manager (ESM) -> Admin Groups -> click on Servers Folder -> In right pane you can see list of all the servers in that admin group & a column named "Edition".

Other ways to find it
You can search for Application Event log 1216/1217.
1216 = Standard Edition
1217 = Enterprise Edition
If it has more then one Storage Groups then it is Enterprise, if it has only one then try to create a new Storage Group and if you can not then it is Standard Edition.
In Exchange 2003 Standard Edition database storage limit is 16GB / 75GB and in Enterprise Edition 8000GB.

Hi Amit,
when you say 75GB on the Standard Edition , do you mean that the .EDB files won't exceed 75GB ?
example : my current .EDB is around 40GB and .STM is around 13GB so when will I hit the brickwall on my Standard Edition of my Exchange 2003.

The limit is "so to speak", the combination of the EDB and the STM. On standard edition, the max is 75GB, but you will probably start getting warnings at around 70GB. You may find your exchange store dismounts every 48 hours after you exceed that limit.
There are registry values that allow you to increase the logical size upto 75. There is a great article here that allows you to change the limits and the buffers,
