Is there a way to append text to every email sent in Exchange 2003
We want to embed text about how to unsibscribe to our emails in every email sent. Instead of going to every email signature in our office I was wondering if there was some option on the server in which this could be accomplished.

In 2003, your choices are 3rd party software:

Event Sinks:
http://support.microsoft.com/kb/317680 ( which wont work if the message is submitted by a mapi client)

Out of curiosity, you imply this is a 2003 restriction. Is there a way to accomplish this in Exchange 2007 or 2010?

Yes, in 2007/2010 you can use Transport rules to add disclaimers.
