Please can someone come and look at my outlook settings I have sent two different invites out (to board members, no less) and on two separate occasions my outlook has changed the date to the previous day.

Does it happen in each time you send the meeting request? Can you reproduce it when you do that through OWA?

Please make sure that you create a new Appointment/Meeting and send the invitation. (Do not open the exist recurrence calendar item and send the update in this case).
