MX RECORD???
Justin installed Exchange 2007....where and how do I create an MX record?

First off, more environment information would be helpful.
Are you running local DNS? Was your exchange 2007 server hosting AD? If so it should automatically have created a DNS record if you're using local DNS.
If you're missing MX records locally you can create them by going to administrative tools and then DNS on the server hosting your DNS. You would then go to forward lookup zones and then either create or change your mx record for your domain. A Host record points a name to an IP address, and your MX record points your domain to which server is your email server so Host or Child text is same as parent folder. FQDN would be your domain such as mystuff.com and your email FQDN may be exchange.mystuff.com and the priority should be 10.
If you are relying on the internet, you would add an MX record to your online hosting package and point it to the public IP of your exchange 2007 server as well as a host record. This generally requires a static ip or some dynamic dns reporting prog.
