Missing Public Calendar Items in Exchange 2007
In the past couple of days we have had users saying that items in the Public Calendar are being deleted/disappearing. Is there any way I can use a utility or command to find out how they are being deleted or by whom they are being deleted. Maybe even track the items being deleted or enable some type of logging to do this?

Not really. You can log public folder deletions, but not the items within easily.May I suggest that you set the permissions so that users can only create and delete their own items and not others?You can give a few select users owner permissions to the folder.http://technet.microsoft.com/en-us/library/bb310789.aspx
