Hi,
Would you please let me know which SMTP information you would like to monitor? The total message sent size, the total number of messages sent and received or others?
Regarding the Exchange performance, I suggest you read following information

Hello,Addition to Mikes response, you can use MOM/SCOM to monitor your
Exchange performance automatically or you can even use manual method for monitoring and alerting on specificproblem when queues get build-up

basically how many mails are recieved and sent over a specified time period. at the moment we use recieved/min and sent/min but the figures we get from there do not match our pure message server.

Hi,
I think that you can use following counters to monitor the message received and sent:
Performance Object: SMTP Server
Counters:
Messages Received Total
Messages Received/sec
Messages Sent Total
Messages Sent/sec
