In this case you typically modify the Common Name, Account Name, Display Name, and it's best practice to add a new SMTP address with the new name and change it to primary, do not delete the previous SMTP address. These are very simple administrative steps which have literally tons of documentation, articles and blogs already dedicated to them. I suggest you just search online and check the Exchange Help Documentation (just hit 'F1' which in the Managment console).
