The only way I can think of would be to have all your email delivered to a .pst file on your computer. But then it is in a very vulnerable place.

The only way to avoid your administrator access the mailbox, you can remove full access permission on the mailbox.

Moreover, we can use mailbox audit logging to log mailbox access by mailbox owners, delegates and administrators.
