Reading fields from a custom mail form using EWS

Running Exchange 2007

Outlook Client 2010 64bit

I have been able to use EWS to read standard mail items subject, body, from etc...  The goal is to parse the messages and update DB tables. 

I am trying to use a custom mail form as a data entry template and I looked at ExtendedPropertyDefinition and accessing the ExtendedProperties property but am not able to figure out how to key into each field.  Articles reference getting at these fields by their GUID but I don't have any way to get at the GUID for each of these fields.  I looked at using OutlookSpy but I am running 2010 64 bit client and the 64 bit version of OutlookSPy only work with Exchange 2010 and later.  I am stuck with Echange 2007 for the near

The version of Exchange your running has no bearing on OutlookSpy as it runs within Outlook and will work fine with Outlook 2010 on Exchange 2007. (I don't think it supports in Outlook 2007 64 bit).

Another Mapi editor you can use is MFCMapi http://mfcmapi.codeplex.com/
