Route email to SharePoint Server through Exchange 2010
Our SharePoint Admin wants to use our Exchange 2010 server to "filter" emails being sent to his SharePoint 2007 and 2010 servers. We have ForeFront installed on the Exchange server so he wants to take advantage of that, but keep the SMTP server running on
the SharePoint servers to receive the email fro Exchange 2010 and send as needed for workflows and Document Enabled Libraries.
How would I go about doing this?

If you can send mail from Exchange to SharePoint folders now, then all you should have to do is route all your SharePoint mail to Exchange and Exchange will forward it to SharePoint. Just change your MX record for the domain that you use for SharePoint
to the Exchange server.
If you need to configure Exchange to send mail to SharePoint, you can create a new e-mail domain like sharepoint.company.com, and configure a send connector to route that address space to the SharePoint server's SMTP address.
You can also create contacts in Exchange that direct mail there. In this case you could have a contact that directs an address like
foldername@company.com to
foldername@sharepoint.company.com, and the added benefit of that is you'll have a GAL object for that folder.Ed Crowley MVP "There are seldom good technological solutions to behavioral problems."

Wouldn't you also need to add the SharePoint e-mail domain to the Exchange Accepted Domains list if it is different, so that Exchange will accept mail in for that domain? Or does having the Send Connector bypass that? (But then would that not be relaying?)

Yes, you'd need to do that if Exchange is going to redirect the mail. You'd make it an Internal Relay accepted domain.
