SBS2011 unbootable & need to recover a mailbox

I have a client who deployed SBS 2011 Standard themselves and the backup failed several months back without them noticing. (the reason for regular testing of backups!!!). The server has crashed into an infinite reboot loop.
I was about to move them over to Office365 P1 anyway as they only require these features. All but one user have outlook setup and up-to-date to the point of the server crash, so these have been exported and imported into the new Office365 accounts. The server
is not required anymore so repairing it is not required.
I just need to recover 1 account from the server's hard drive, in offline mode as the server will not boot. What is the best way to go about this?

Check out Lucid8's DigiScope
