How many SSL certificates do I need for Exchange 2010?

You can have just one, you just need to plan the deployment right.
You need to consider if you will have a TMG server, if you are using a CAS array and so on. If you provide a little more information we might be able to give a more exact answer.

Single CAS server, no TMG or ISA just the firewall. I've heard (read) you need multiple certs for the different services (Autodiscovery, OWA, ActiveSync, etc). What other info do you need?

Normally I use one certificate for these deployments, but you need a SAN certificate.

And of course a bit of easy information is just using the certificate guide that is built into Exchange 2010. If you mark "Server configuration" in the management console you will have a "New Exchange Certificate" option in the Actions pane. If you follow
that it will generate the request with the names that you need.
These are the names i normally use:
autodiscover.domain.com
webmail.domain.com
FQDN on server
NETBIOS on server
