Send from any of users e-mail addressesS
So i have a few users who have a single exchange mailbox, with several e-mail addresses linked to them, e.g.
Users can receive mail from both addreses but can only send from the default, i dont really want to have to several mailboxes per user and deligate full control, this would not be practical.
how can this be done?

question isn't clear to me, let me know if i misunderstood it.
If you find more than one email address in the email addresses tab for a user does not mean that user has number mailboxes, they are secondary email addresses which are added with the help of email address policy.

Agree with imkottees, all SMTP address that in Email Address List you provided belong to one mailbox. So dont worry about it.

no the question has been completely missed, heading is SEND from multi addresses
the user above needs to be able to SEND from both the .co.uk and the .org.uk using outlook's from box.Joe

exchange does not support this by default.. you can try some third party tools
