Build your new server and install Exchange 2010 with desired roles ( CAS /HUB)
Configure them same as your existing server, all Services (OWA etc.)
Un-install Existing roles from first server (CAS /HUB)
good luck

After you build and install the new HT server, make sure you change your send connector source servers to represent your new one and not your old one. Receive connectors on HT servers are independent, so make sure you have duplicated your receive
connectors on your new HT.
After that is complete, make sure mail is routing through the new HT using message tracking and logs, when you are sure mail is flowing through the new HT, remove the HT role from your original HT/CAS. If you do it this way, you will not need to change/update
your CAS services.
If you are going to install a new CAS, then just install that role and configure all your services to whatever name you are utilizing and dont forget to move your certificate if you are using a 3rd party CA.
