I bought a 5 pack of Windows Server 2003 books which came with a 180 day evaluation copy of WS 2003. I activated itand have been using it successfully, but havent finished using it for my studies and the 180 days is up. Can I reinstall and then reactivate ? or will I be limited to reinstalling it every 14 days ?

I think once the key is used you cannot re-activate it.
