Server 2008 and Exchange 2007
Is SBS 2008 withExchange 2007 only x64 or will there be a x86 version and will Exchange 2007 be available in 32-bit version besides trial mode?

Exchange is only supported in x64 systems, 32-bit is for testing purposes only.

What is the upgrade path going to be? Will you be able to upgrade SBS 2003 to 2008 or will it have to bea complete rebuild?

SBS2003 can't upgrade to 2008, you have to reinstall it and SBS 2008 must be installed at Windows Server 2008.
