I work for in an office there is just myself and another girl. We are running into an issue where we both reply to the same email, which is starting to get old. We do not want to split the inbox into different folders. It would just be nice to look at the messages and if I reads/replies message (A) it would be "Green" if she reads/replies to message (B) it would be "Pink". If it was new "Blue" and if we both looked at it "Grey" I have no idea if it can happen or not, but willing to take any and all ideas. 

We use the same Email on Outlook it is set up as IMAP. I know Outlook has a way for you to Categorize email, but it needs to be set up as POP3.

As you are using an IMAP account, please note Category is not supported for IMAP in Outlook, this is by design.

Based on the description, my understanding is that you and the girl share the same email account? If so, there is nothing we can do to let Outlook distinguish who is using the account or mark the item. There is no such method to realize your request so far.
