I'm trying to do some tracking of Skype activity for some of the users on our Office 365 account. I found the Admin Console->Reports->Skype For Business->User Activities report, and I can see number of IMs per month for the last three months, but I'm hoping to get a bit more granular; I'm hoping to be able to see number of IM sent to specific users. I've done some digging and it looks like the powershell commands provide pretty high level reports - number of active users daily/weekly/monthly - but don't even seem to be able to get the same level of detail as that provided via the admin portal.

Is there a powershell command (or otherwise) that I can run a report on number of IMs between (or to) specific users?

As you are using Office 365, I don't know how to realize the request. You can post the question in Office 365 Community to see if you can get any useful suggestions:

I also found this blog below, from which you can learn to get more details about the IMs. Anyway I can't guarantee if it works for Office 365 environment as well, just for your reference:
