Is there anything in the headers of those emails that identifies them as having been forwarded from GMail?

Hi,
What's the version of the Exchange server?
If it's Exchange 2007, you can implement the Transport Rule to work on this issue.
Thanks

I'd use header X-Forwarded-For contains text pattern \S*@gmail.com for the condition.
