Version Differences, 365 with fewer options?

The question is whether 365 offers the same level of features, options, functions, etc., as the Office 2013 Professional version.

I am teaching the Office 2013 programs and more and more of my students are using 365. They are having problems finding the complete set of options as noted in our textbooks and online references. For example, when I look at the theme options in Excel 2013 I see about 25. My students are seeing 6-9 themes. I'm hoping we don't find more crucial areas missing commands or options.

As far as I know, Office suites included in each Office 365 plan might have slight differences on the features that supported. For example, Excel 2013 in Office 365 ProPlussupports some additional BI stuff, like Power Pivot, which is not supported in Office 2013 Professional.

Regarding the theme issue mentioned in your question, the default location of Office theme should be:C:\Program Files (x86)\Microsoft Office\Document Themes 15. Please have a check and see if there is any difference
