Found my answer:

Configuration.xml elements used for packager mode

Command How packager mode uses Click-to-Run Configuration.xml file information

/packager

Required:

Add. Specifies the products and languages to include in the package.

OfficeClientEdition (attribute of Add element). Specifies the edition of Click-to-Run for Office 2013 product to use: 32- or 64-bit. The task fails if OfficeClientEdition is not set to a valid value.

Product. Specifies the Click-to-Run product to include in the package. You can include more than one product. For example, you can specify O365ProPlusRetail, VisioProRetail, and ProjectProRetail.

Language. Specifies the language to be installed.

Optional:

SourcePath (attribute of Add element). Specifies the path of the Click-to-Run Office source from which the App-V package will be made when running the Office Deployment Tool in packager mode. If SourcePath is not set, Click-to-Run Setup will attempt to find an \Office\Data\... folder structure in the working directory from which you are running setup.exe. Then it will fall back to install directly from the external Content Delivery Network Internet source.

Version (attribute of Add element). Specifies a build to use for the package. Defaults to latest advertised build (as defined in v32.CAB or the v64.CAB at the Click-to-Run Office source).
