For outlook clients you can use Exmon to report detail about clients which will show you source and version details. For active sync clients you can use active sync log and expert it in spreadsheet. Below URL will help you to get detail.
Exmon for Exchange 2007 SP1? Check!

How can I see how many iPhones are connecting to my server and which users have them?http://blogs.technet.com/b/exchange/archive/2008/07/11/3405745.aspx
Another question for cloud.
Exchange 2010 come with in-premises and cloud base solution, Means you can integrate it with hosted cloud such as Microsoft onlin service for Exchange. For the organization those some employee are working on remote location and do not have direct link with
corporate they can go with Microsoft online hosting solution. Finally its feasibility of ORG and magmt decision :)
I hope i answered your question. Good Luck.

1. It depends on the Orh road map and strategy, if management see this is cost saving for one, then they will go ahead with this.
2. One common reason which comes up for not going to the cloud for some customers is for compliance and legal reasons, not sure of the nature of your company but some authorties wont allow data to reside in certain countries.
3. Some cloud services dont allow you to integrate your infrastrcuture on their platfor, if it's shared such as BES, there may be other internal application that rely on hooking into exch which cloud services wont allow you to do.
4. Some are concerned about data integrity and security, if it get's int he wrong hands, could have impact to business, although there are polcies and procedures, that doesnt mean those who have access will follow this, how many time have you heard of customer
bank details being stolen when outsources etc....
5. Some cloud services may not meet your SLA/RPO/RTO, again impact to the business.
6. I still feel the cloud hasnt matured yet.Sukh
