how to configure a mail server to keep email with unidentified Address
I want to develop an upplication that involves email servers.
One of it's features will be keeping a sent email even if the server doesn't recognize the address.
As I am not familiar with exchange servers (and mail servers in general) answer may vary from: "it's trivial - go to screen so and so in exchange and turn a bit" via "it's not legal" to "write your own mail server".

You didn't specify a version of Exchange and reading between the lines you haven't got one yet so let's assume E2010. See:
http://technet.microsoft.com/en-us/library/bb691132.aspx to create a catch-all mailbox which will take delivery of all messages that are sent to email addresses that do not exist in
Active Directory.
