There is a way to remove old Exchange objects from AD when they can not be properly removed using the Exchange installation tools; but, it can be very dangerous.
You can use ADSIEdit to remove the objects directly out of AD;
this should be a last resort.
Open ADSIEdit, go to the Configuration container, CN=Services, CN=Microsoft Exchange, CN=Administrative Groups, CN=Exchange Administrative Group and then open CN=Databases to remove the databases, and CN=Servers to remove the servers.
I have done this for Exchange 2003 and Exchange 2007 with no problems; luckily I have not had to try it with Exchange 2010.
Good luck.TBrennan
